What is the usual delay between Syncthing official release and Syncthing for macOS release?

Anywhere from minutes to several weeks, in my experience. The macOS builds are done by @jerryjacobs, and it appears to be at least somewhat of a manual process.
If you want an “instant” up-to-date build, you can give my build script a try, might need to tweak it a bit for your environment. Or just wait.

Or have a little patience for the release to re-package and propagate. I use Syncthing myself, so I always want to be up-to-date
