Searching the extensive and fractured systemd documentation is a pain, but you can easily find this information with a google search:
Place a file containing the following to /etc/systemd/system/syncthing@.service.d (or the user directory, but I assume you run it as system service), run systemctl daemon-reload and restart the Syncthing service:
[Service]
Environment=STTRACE=*your value*
