If I ever need to factory reset my phone or PC, how can I backup the data so that I wouldn’t need to redefine devices and folders?

Get the config folder from your home folder (if you didn’t redirect it). Config.xml and the .pem files.

And about the android? Do you know how that is?

There is an option to export/import the configuration in the Syncthing application.
