Best practice for syncing external media (adding space)

I want to ‘backup’ my laptop with a one-way, versioned sync to an old Linux system. This older Linux box has limited storage. Only 2x on /home, which is within root /.

I can add external USB storage. This adds storage to 3x what I want to backup, but this is at /mnt/

I’d normally solve this with symlinks but that’s not supported anymore. So, what’s the correct to solve this?

I notice recommendations to use rsync because syncthing is for sync, not backup but I’d prefer to keep everything within Syncthing. I can just use 2 way sync and not touch the old linux box if this is more reliable.
